Asparagus Chowder

Winter is the perfect time to try out new soup recipes. This is one of our favorite Masstown Restaurant soups using asparagus, a nice healthy green vegetable you can usually find most of the year in the produce section at Masstown Market. Filled with nutrients and fiber and low in calories, add asparagus to your regular meal planning.
  • 6 Slices of Bacon (cooked and diced)
  • 1/2 cups Chopped Onions
  • ½ chopped Red Pepper
  • 1 Tsp. Minced Garlic
  • 2 T. Butter
  • 2 cups Diced Potatoes
  • 1 ½ cups Diced Chicken
  • ¼ cup Flour
  • 3 cups Chicken Broth
  • 1 cup Milk
  • ¾ cup Corn
  • 1 tsp. Thyme
  • ¼ tsp. Salt and Pepper
  • 1lb Asparagus cut into 1 inch pieces
  • 1 cup Cream
  • 2 T. Parsley
Cook bacon and then add onions, red peppers, butter and garlic and sauté until tender. Add potatoes and chicken and stir in flour, then add broth, milk, corn, salt, pepper. Bring to boil and cook 10-15 minutes, until potatoes are tender. Add asparagus and simmer 10 more minutes. Add cream and sprinkle with parsley. (Top with Masstown Creamery Cheddar for any taste treat)
